Even the kitties were treated to cans of tuna and catnip-filled toys. They each got a bucket, but Abbey's a greedy gus.
We had a huge Easter dinner in the early afternoon with all of my favorites. I'm not even going to lie - Easter dinner was tailored to my tastes.
The ham was simple. I tossed out the honey glaze because I don't like it and cooked following directions on the packaging. I think it was cooked 15 minutes per pound at around 350 degrees.
The green bean casserole is mine and my husband's favorite. I don't use cream of mushroom soup like the recipe calls for because my mom never did. Instead, I use one can of cheddar cheese soup, 3/4 of that can milk, two cans of drained green beans, and I mix in about half of the can of fried onions into the casserole. I bake that for about 40 minutes at 350, then pull it out and add the rest of the can of fried onions to the top. I put it back in the oven for about 10 minutes to brown, and voila, cheesy, oniony green bean goodness.
The french onion potatoes are actually my friend's recipe. She used about 7 medium-sized (like the ones that come bagged together) potatoes for 5 people. She mixed 2 cups of mayo with two packages of Lipton's french onion soup mix (the ones that come in a box in a two pack anyway), and stirred the mixture in with the potatoes. It was cooked on the bottom rack for about an hour at 350 (she says she usually cooks it at 425/450 for a shorter amount of time) until all of the potatoes were soft. Delish! We had plenty of leftovers too.
Fruit salad: mix together some fruit. Ta da!
These deviled eggs are fabulous, and I'll tell you why. You know how to make deviled eggs, right? Mix the hard-boiled egg yolks with mayo, mustard, and relish to taste. Here's the secret ingredient that my mother-in-law clued me in on: garlic powder. Mix some garlic powder in there to taste and POW, delicious deviled eggs with a kick. Sprinkle with paprika.
I also made some out-of-the-box springtime funfetti cupcakes, but I didn't take pictures. They were good though!
I can't quite recall what we did after dinner or what we ate for supper. I'm pretty sure we went into a food coma. To me, that's an indication of the perfect over-indulgent meal.
